
Hour 20 began at a friend’s dinner table, when one bite of Jasmine’s sourdough would not let go of Lia. Today our loaves rise for twenty hours and more in a licensed bakehouse, shaped by hand before dawn and baked in German stone-deck ovens.
Founded by three mothers with ten children between us, we hold one rule above the rest: if a third-grader can’t read the ingredient list, we don’t bake with it.
Every loaf is baked to one hundred percent, frozen at its peak, and carried overnight to your door — so what you reheat is the exact moment it left the oven.

Every rise begins with levains we raise ourselves: living cultures born from flour and water on our own counter, fed by hand every day. We have never used commercial yeast — the wild cultures do the slow work, and the flavor is theirs.
Then comes the long, cold ferment. When each loaf is ready is a baker’s call, made by eye and by hand — the clock never decides.
